Anti-Angiogenic Red Grape Salad

One-Pot Turmeric Chicken Couscous


This Red Grape Salad is not just tasty but also full of health benefits, mainly due to its anti-angiogenic properties. The main ingredient, red grapes, contain high levels of resveratrol.


Resveratrol's function in inhibiting the growth of blood vessel is like a dam blocking the flow of water to a downstream village, depriving it of the resources it needs to thrive. It can therefore be beneficial in the management of vascular birthmarks. It's also has a great balance of flavors and textures that make it a very satisfying treat.


 

Anti-Angiogenic Red Grape Salad


Ingredients

  • 4 pounds red seedless grapes

  • 9 ounces cream cheese, at room temperature

  • 1¼ cups sour cream

  • ½ cup + 1 tbsp granulated sugar

  • 1 teaspoon vanilla extract

  • 1 ¼ cups chopped pecans for garnish

  • ½ cup + 1 tbsp brown sugar


 

Instructions


  1. Prepping the cream cheese mix: Start with 9 ounces of room-temperature cream cheese. Using a large mixing bowl and an electric mixer on medium speed, beat the cream cheese until it's smooth. This process should take about a minute.

  2. Adding sour cream and sugar: To the softened cream cheese, add 1¼ cups of sour cream and ½ cup + 1 tbsp of granulated sugar. Continue to beat the mixture until it's smooth and thick. This will take around 2 minutes.

  3. Infusing vanilla flavor: Add 1¼ teaspoon of vanilla extract to the mixture and beat it again for a minute until it's well incorporated.

  4. Adding the grapes: Now, add 4.2 pounds of well-rinsed and drained red seedless grapes to the bowl. Using a rubber spatula, gently fold the grapes into the cream cheese mixture until they're evenly coated.

  5. Refrigeration: After ensuring that the grapes are well coated in the cream cheese mixture, refrigerate the mix for at least 1 hour before serving, allowing the flavors to meld together. However, for best results, allow it to chill overnight.

  6. The final touch: Just prior to serving, sprinkle the salad with ½ cup + 1 tbsp of light brown sugar and 1¼ cups of chopped pecans. This will give your salad a sweet crunch that complements the creamy grapes.
