What you need:

  1. Start by filling a large pot with water and a hefty pinch of salt. Bring it to a boil. In the meantime, preheat your grill to medium heat.

  2. Clean your artichokes by rinsing them under cold water. Cut off the stem close to the base so the artichoke can sit flat. Slice off about 1 inch from the top of the artichoke. To prevent browning, rub the cut areas with a lemon.

  3. Take your artichokes and cut them into quarters. To remove the choke from each artichoke quarter, use a small, sharp knife and carve out the fuzzy center and any small, purple-tipped leaves. To prevent browning, hold the prepped artichokes in lemon water until you're ready to cook them.

  4. Once ready, add the artichokes to the pot in a single layer and cook them until they're crisp-tender, which should take about 12 minutes.

  5. Once cooked, drain the artichokes and let them cool for a few minutes. Brush them with oil and place them on the grill. Grill them, turning occasionally, until they're charred in spots. This should take about 10-15 minutes depending on your grill.

For the Garlic Parsley Sauce:

  • 1/2 cup yoghurt

  • 1/4 cup sour cream

  • 1 teaspoon chopped fresh parsley

  • 2 cloves minced garlic

  • 1/2 teaspoon nutmeg

  • 1 tablespoon extra virgin olive oil
