One-Pot Turmeric Chicken Couscous


Turmeric, often referred to as the golden spice due to its vibrant color, carries significant health benefits, one of which is its powerful anti-angiogenic properties. This means that it has the ability to prevent the formation of new blood vessels that unwanted growths in the body might need to grow and spread. In essence, it serves as a natural defense system, creating a hostile environment where these growths struggle to establish the blood supply necessary for their growth and survival. This can be beneficial in the management of many types of vascular birthmarks.


This One-Pot Tumeric Chicken Couscous dish is not only easy and delicious, but can be a great addition to a balanced anti-angiogenic diet.



 

One-Pot Turmeric Chicken Couscous


Ingredients

  • 8 skin-on, bone-in chicken thighs

  • 3 tsp turmeric

  • 2 tbsp garam masala

  • 2 tbsp olive oil

  • 1 large onion, finely chopped

  • 4 garlic cloves, minced

  • 2.5 cups chicken stock

  • A handful of green olives, pitted

  • Zest and juice of 2 lemons

  • 1.5 cups whole grain couscous

  • 1.5 cups of fresh parsley, chopped

  • 1.5 cups of fresh cilantro, chopped


 

Instructions


  1. Season the chicken thighs with turmeric, garam masala, and salt ensuring they're entirely covered. Heat the olive oil in a large sauté pan with a lid. Fry the chicken, skin-side down, until golden brown, flip, and cook for a few more minutes before removing from the pan.

  2. Add onions and garlic to the pan and sauté until golden. Stir in the remaining spices and cook for a minute. Pour in the chicken stock and toss in the olives. Bring to a boil, reduce the heat, and place the chicken, skin-side up, in the stock

  3. Cover the pan and let it simmer gently until the chicken is tender, around 35-40 minutes. Remove the pan from heat.

  4. Stir the lemon juice and couscous into the pan, adding boiling water if needed just to cover the couscous. Cover the pan and let it stand for 5 minutes until the couscous is cooked.

  5. Stir in half of the parsley, cilantro, and lemon zest, place the chicken on top, and garnish with the remaining parsley, cilantro, and zest before serving. Enjoy your One-Pot Turmeric Chicken Couscous!
